      Two come to mind right away:

      FlightGear is an excellent open-source flight simulator. It's not quite as slick as MS Flight sim, but now that Microsoft is out of the simulator market, I'm expecting the FS community to move towards flightgear, because it's much easier to mod than FS ever was.

      Flightgear has a large stock of aircraft, a very nice multiplayer mode (using google maps as a real-time navigation interface) and multiple flight models. It is used by numerous flight schools and engineering programs to teach flight modeling and simulation.

      Orbiter isn't really a flight simulator, but a space simulator, written by a NASA rocket scientist. It is unbelievable. It's definitely not a toy (You won't be blowing up any aliens) but you will learn about orbital physics as you take a ship into orbit, dock with a space station, operate an orbital tug, land on the moon, and voyage to Mars and the far planets. It's about as deep a simulation as I've seen, and it's free. It's only for Windows, but I've seen some people run it with WINE on Linux.

      FMS (Flying Model Simulator) gets an honorable mention. It's a fun little free simulator for Windows) but it's focused squarely on RC aircraft. There's no cockpit view, so it takes a little experience to get used to flying from the outside of the aircraft. Still, there are hundreds of free planes, so it's pretty fun.
